Vitamin C is a potent water-soluble antioxidant essential for collagen synthesis, immune function, and iron absorption. It cannot be synthesized by humans and must be obtained through diet or supplementation.
Vitamin C (ascorbic acid) is a water-soluble vitamin and powerful electron donor, functioning as a cofactor for at least eight enzymatic reactions, including those involved in collagen biosynthesis, carnitine production, and neurotransmitter synthesis. As an antioxidant, it regenerates other antioxidants such as vitamin E and protects cells from oxidative damage. Vitamin C enhances non-heme iron absorption in the gut by reducing ferric iron to its more absorbable ferrous form. It also plays a central role in immune defense by supporting epithelial barrier function, enhancing neutrophil chemotaxis, and stimulating lymphocyte proliferation. While severe deficiency (scurvy) is rare today, suboptimal intake is common and associated with fatigue, impaired wound healing, and increased susceptibility to infections.
Vitamin C accumulates in immune cells and is rapidly depleted during infections. Supplementation reduces the duration of common colds by 8% in adults and enhances immune cell function.
Vitamin C is a required cofactor for prolyl and lysyl hydroxylase enzymes, which stabilize the collagen triple helix structure needed for skin, cartilage, and blood vessel integrity.
Co-ingestion of 100 mg vitamin C with a meal can increase non-heme iron absorption by 2–3 fold, making it particularly valuable for individuals at risk of iron deficiency.
